Miso has been an essential part of the Japanese diet. After World War II, Japan began adopting the traditional American diet and soon, Japan's fat intake quadrupled and diseases that were unheard of before became more common.
Miso is a wonderful condiment. It has high nutritional value; it contains enzymes, protein, vitamin B12, vitamin E, isoflavones, choline and lecithin that helps benefit one's diet. It is created by taking steamed soybeans, rice, wheat and other ingredients then mixing them with salt and malted rice and then left to ferment.
